Tips on Preparing an Espuma
The iSi Gourmet Whip PLUS and the iSi Thermo Whip PLUS are the ideal devices for making all types of Espumas. Please follow the following instructions:
- The weight of sheet gelatin varies from country to country. For our recipes, gelatin sheets weighing 1.7 g each were used. Please adjust if necessary. Always soak gelatin sheets in cold water (max. 15 °C) to soften, then press out excess liquid before dissolving in a small amount of warm (max 60 °C) liquid from the recipe.
- If using powdered gelatin, substitute 2 g of powder gelatin for each sheet of gelatin. Stir the powdered gelatin into some warm, liquid from the recipe to dissolve. Follow instructions on gelatin package for best results.
- Gelatin can be replaced with other suitable binders (e.g., agar-agar, starch or cream). If using liquid cream, do not mix it with the other ingredients. Rather, add the cream separately at the end.
- Purée mixture and strain through a very fine sieve (hair sieve) before pouring it into the iSi Gourmet Whip PLUS or iSi Thermo Whip PLUS.
- Depending on the desired consistency, the following number of chargers are usually needed:
- 1 iSi charger for the 0.5 L iSi Gourmet Whip PLUS and iSi Thermo Whip PLUS
- 2 iSi chargers for the 1 L iSi Gourmet Whip PLUS and iSi Thermo XPress Whip PLUS
- Important: Shake vigorously after screwing in each charger!
For optimal consistency of whipped cream, shake about 3 times. For lower fat content (min. 30%), shake more if necessary.
- For cold Espumas with gelatin, place the iSi Gourmet Whip PLUS in the refrigerator for 6-12 hours or overnight before serving. For warm Espumas, keep the iSi Gourmet Whip PLUS (without the charger holder) warm in the bain-marie at a max. of 75 °C.
- Never place the iSi Thermo Whip PLUS in a bain-marie. For hot preparations that need additional cooling after being poured into an iSi Thermo Whip PLUS, cool in the refrigerator with the head off, for at least 2 hours before closing and charging.
- Vigorously shake the device downward once in order to bring the mixture to the head of the device.
- Before serving, dispense a small amount to test for consistency.
