The Espuma Method
An Espuma is defined by the flavor, temperature and basis used for production.
1. Select a flavor
With the iSi Gourmet Whip PLUS and iSi Thermo Whip PLUS, Espumas can be prepared from a multitude of ingredients. The following ingredients are suitable:
alcohol, eggs, fish, meat, foie gras, fruits, vegetables, grains, spices, cocoa, caviar, herbs, cheese and milk, jams, olives, juices, tea and coffee, water...
2. Choose a preparation
The mutability of Espumas means that they can be used with a multitude of preparations:
- cocktail
- aperitif
- finger food
- soup
- sauce
- side dish
- cream
- dessert
3. Determine the consistency
The consistency of the Espumas depends on the composition and the rest/cooling time. One and the same Espuma can exhibit different consistencies depending on whether more or less gelatin, fat, albumen, or starch is used and on how long it is cooled:
Firm - like a mousse
Creamy - like a cream
Liquid - like a soup or a sauce
